Last week I discovered a yummy recipe for ‘Savoury Mexican Muffins’ by Lucy Lord, which I’ve been itching to try.
So I rolled up my sleeves and gave it a go ...
Wow ... I’m so glad I did, the recipe was so easy to follow and the muffins were delicious.
I made a double batch, which has been great, as we had enough for the following day. They keep really well and make a great on the go snack or quick breakfast bite. I can’t wait to try some more of her recipes ... :)
